Instructions

Method

  1. Garnish : Fried shallots and corlander

  2. Marinate chicken with turmeric powder and salt. Set aside.

  3. Heat oil in Inspire Fryer over medium heat. Stir fry spices (cinnamon, cardamoms, star anise) till fragrant.

  4. Add in chopped tomatoes and garlic. Stir evenly.

  5. Add in chicken and let it cook for awhile. Next, add in rice, tomato puree, water, and milk. Stir evenly. Cover fryer and adjust heat to low. Leave it to cook for 15 minutes (without lifting cover). Turn off heat, add raisin, and keep fryer covered for another 10 minutes.

  6. Fluff rice with a fork, garnish rice with fried shallots and coriander.

  • 300 gm chicken (skinned and de-boned)
  • 1/2 tsp tumeric powder
  • 3 3/4 tsp salt
  • 1 1/2 cups basmathi rice
  • 2 sticks cinnamon
  • 2 cloves star anise
  • 4 garlic cloves, finely chopped
  • 1 tomato, finely chopped
  • 2 tbsp tomato puree
  • 350 ml water
  • 75 ml milk
  • 3 tbsp raisins
  • 1 tsp salt/ to taste
  • 3 tbsp ghee/ cooking oil
