Remove seeds from Red Chillies, Green Chillies and Bird’s Eye Chillies.
Add Bird’s Eye Chillies, Garlic, Shallots and cooking oil in Cocotte. Send it in the Microwave and cook it for 5 mins on High heat.
Once it is cooked, pour it onto Smooth Chopper. Add in Dark Soy Sauce, Green Chillies. Red Chillies, Sugar, and Calamansi juice. Give it a vigorous pull. Stop when the chillies has achieved the desired fine texture.
Tips : If you prefer more heat, you may retain some chilli seeds
