Heat Milk till boiling point. Heat off. Pour on a bowl and add in cold butter. This will give you specific lukewarm temperature.
Mix Flour, Instant Yeast, Sugar, Salt in a mixing bowl.
Add egg, milk mixture and combine into a rough dough.
Transfer dough into table top and knead the dough for about 5 minutes until the dough is smooth and glossy. Transfer the dough back to the mixing bowl, cover with clingwrap and proof for 10mins.
Mix all filling ingredients together.
Roll out dough into a big rectangular shape. Spread the filling evenly.
Gently roll the dough with both hands, just like swiss rolls. Cut away the left and right corner that is uneven for nicer outlook. Cut the rolls into 12 even portions.
Apply cooking spray on both UltraPro 2.0L and UltraPro 800ml. Arrange 6 rolls of Cinnamon dough on each UltraPro. Cover with clingwrap and proof for 30mins. Pre-heat oven at 195 Degree Celsius.
Brush milk on top of the cinnamon rolls and push them into the oven and bake for 25mins.
Let the cinnamon rolls to cool down a little before removing it from the UltraPro.
