Ingredients
  • 1 Large Cucumber + 1 tsp Salt
  • 1 Wedge Pineapple Flesh
  • 1 Carrot, skin removed
  • Juice from 3 Green Lime
  • 25 g Dried Shrimps, soaked
  • 1 Red Chilli, seeds removed
  • 4 Shallot
  • 1 Red Onion
  • 1 Kaffir lime leaf
  • 1 tbsp Fish Sauce
  • 1 1/2 tbsp Fine Sugar
  • 1 tsp Sambal Belacan
Method
  1. Chop dried shrimps using Turbo Chopper.
  2. For cucumber : Cut off the ends, skin removed, slice in half lengthwise. Using a spoon, run it down the middle, scooping out the seeds.
  3. Slice Cucumber in Mando Chef with Slicing Blade (Dial to thickness 6).
  4. Add 1 tsp salt into sliced cucumber and let it marinade for 10mins to allow cucumber to release excess water.
  5. Cut Carrot into French Fries Cut in Mando Chef with Slicing Blade (Dial to thickness 6, and Dial Julienne 6mm thickness)
  6. Secure 4 shallots by pushing it into the Mando Chef Food Guider pin. Slice Shallot in Mando Chef with Slicing Blade (Dial to thickness 1). Continue with the same method for slicing red onions.
  7. Cut Pineapple Flesh into bite size wedges. Finely slice red chilli, kaffir lime leaf.
  8. To assemble, put all prepared ingredients in a salad tossing bowl. Give it a toss, and Kerabu Timun s ready.
  9. Note : Kerabu is best served immediately once it is tossed. Peanuts is a very good accompaniment for this salad dish. Do adjust the saltiness and sweetness of the dish according to your preferred tastebud.
